Strawberry Mango Frozen Yogurt

I know to some this hardly seems like the right time of year to be reading about strawberry mango frozen yogurt, but we’re in the tail end of a heat wave here in Southern California, so this suits me just fine right now.   I just had to break out the ice cream maker and get to work. 

I really enjoy the blending of strawberries and mangos –  I think the flavors compliment each other very nicely, but I’ve found if you add equal parts of each fruit, the mango can really overpower the strawberry.  I think I’ve found the right blend of strawberry and mango in this frozen yogurt – it’s got the sweetness of the strawberry with a little zippy tartness of mango. 

If you watching your calories or wanting to keep this a THM “E” food, you can use a non-fat plain yogurt and use the stevia option for sweetness.

When I’m making this for my family, I use full fat yogurt and either raw honey or evaporated cane sugar (ground up in a coffee grinder) for sweetness.

Change things up to suit your needs! 


Ingredients

2.5 cups plain, unsweetened yogurt (home made is best)
2 cups chopped strawberries
1/3 cup chopped mango
sweeter to taste (stevia, honey or grind up some evaporated cane sugar)

Instructions

Add yogurt and fruit to a blender or food processor. Blend it all up. Add sweetener to taste.
Place mixture in the fridge to cool it down for about an hour.
Pour into your ice cream maker and follow manufacturer’s directions to complete.
It gets pretty firm in the freezer, so I recommend letting it thaw a bit before serving.
