1 cup Coconut Water (make sure it’s just coconut water, nothing added to it)
1/2 cup strawberries (I used frozen)
1/2 cup blueberries (also frozen)
a few small chunks of mango
juice of one lemon (I love True Lemon)
Collagen Hydrolysate(good for you and adds some protein)
sweetener to taste (for my kids, I use organic sugar, ground in a coffee grinder, and for myself I use Stevia)
7-8 Ice cubes
1/2 tsp Konjac Glucomannan Powder (Read this post to see why I like to add this)
I begin by putting everything except the ice and lucomannan powder into my Vitamix. Blend it all up. Then add the ice and blend some more. Finally, with the blender running, I slowly sprinkle in the Konjac Glucomannan Powder
That’s it! Easy & tasty! And if you’re following Trim Healthy Mama, this would be an “E” food. Otherwise, it’s a dairy free, gluten free, low fat, sugar free (with stevia) recipe.
