This recipe calls for glucomannan. If you’ve never heard of glucomannan, you’re not alone.  I found out about it when I read Trim Healthy Mama.  Glucomannan is a gluten free, wheat free, low carb, sugar free, pretty much tasteless (as far as I can tell) dietary fiber that comes from the root of the konjac plant. It works great as a thickener or emulsifier.  It’s not cheap, but one bag will last you forever.  Well, maybe not forever, but for a really, really long time.

Adding the glucomannan to the slushy is the trick.  You don’t have to go overboard on the ice because the glucomannan gives an extra boost to the thickening.  I’ve made this numerous times now, because every time I make one for myself, one of my kids wants one. My blender is getting quite a workout.

Ingredients:

  • 1 large lemon (juiced)
  • 1 ½ cups frozen strawberries
  • 1-2 packets of stevia (to taste)
  • ½ teaspoon glucomannan powder (thickening agent)
  • 1 cup water
  • 1 cup ice cubes

Instructions:

  1. Prep the Lemon: Juice the lemon, removing any seeds. Set the juice aside.
  2. Blend the Ingredients: In a blender, add the frozen strawberries, lemon juice, stevia, water, and ice cubes.
  3. Add the Thickener: Sprinkle in the glucomannan powder. It acts as a natural thickener and will give the slushy a smooth, satisfying texture.
  4. Blend Until Smooth: Start blending on low, then increase to high until the mixture is smooth and slushy, with no large chunks of ice remaining. This should take about 1-2 minutes.
  5. Taste and Adjust: Taste the slushy, and add more stevia if you prefer it sweeter.
  6. Serve Immediately: Pour the slushy into glasses and enjoy immediately while it’s still icy and refreshing.
